釀酒葡萄

葡萄栽培英文Viticulture,源自於拉丁文vine)是一門專門研究葡萄和生產葡萄的學科,除了包含一連串在葡萄園中進行的工作之外,將葡萄拿來釀造的過程也屬於葡萄栽培,為園藝學的一個分支。

雖然過去一般常見的釀酒葡萄原產地分佈範圍僅從西歐波斯裏海沿岸,但因葡萄自身對環境的的高度適應力,以及偶然發生的突變,加上人類不斷的引進至新環境,直至今日,全世界除了南極洲以外的地區都可以見到葡萄的蹤跡。[1]

葡萄栽培的工作內容為監控蟲害施肥灌溉樹冠管理英语Canopy (grape)、監控果實的發育情況以及是否具有酒品特色英语Typicity、決定何時採收、冬季剪定英语Pruning等。另外,釀酒師往往會密切的參與葡萄栽培的過程,這是由於採收的葡萄所釀造出的葡萄酒酒品特色與葡萄園的管理過程密不可分。
