斑点布丁（Spotted dick）是一种传统的英国蒸布丁甜点，传统以板油与果干（以桑特醋栗或葡萄为主）为原料，并配上卡士达食用。
部分非传统的食谱会以如奶油等其他油类取代板油、或添加鸡蛋使其口味接近海绵布丁或蛋糕[1]。
名称由来[编辑]
名称中的“斑点”与其包含水果干的外观有关，而当地俚语中常以“Dick”与“Dog”代指布丁，因其与面团的“Dough”来自相同的语源[2]。
在19世纪末的英国哈德斯菲尔德所留存的词汇表内写到：“Dick，无添加配料的布丁，配上Treacle（一种糖蜜）者则称为treacle dick”[3]。

这道料理最初于阿里克谢·索耶于1849年的著作《The modern Housewife or ménagère》中提及[4]，其中写道：“果干靠枕（Plum Bolster），又称斑点布丁（Spotted Dick）－将两磅的面糊擀开，再加入士麦那产的葡萄干混匀”[5]。
另一种称呼“Spotted dog”则于1855年首次出现于C.M. Smith的著作《Working-men's Way in the World》，其中被描述为“口感非常粗糙的圣诞布丁”（Very marly species of plum-pudding），这个名字与“铁路蛋糕”（Railway cake）在爱尔兰被普遍使用，不过当地的作法更接近加了桑特醋栗的苏打面包[6]。
在1982年的《帕尔默尔报》中写道“基尔伯恩姊妹（the Kilburn Sisters）每天以汤与斑点布丁喂饱数以百计的码头工人”[7]。
因为名称中的“Dick”容易使人联想到俚语中的“屌”，这道料理也经常被用于双关语的笑话中。据说西敏宫中的餐厅员工以“斑点理查”（Spotted Richard）称呼这道料理，以“避免引起骚动”[8]。
