食用菌

食用蕈,或称食用菌食用菇食菇,是可以食用的大型真菌子实体(不包括酵母菌青霉菌微生物)。决定真菌是否可以食用的因素包括毒性、味道、硬度、和气味。有些有毒的蕈类经过特定的处理(例如煮熟)后也可以食用。人类食用各种食用蕈的主要原因包括当作食物以及当作药物(特别是在民俗疗法中)。有些有致幻效果的蕈类,例如迷幻蘑菇,被用作娱乐和宗教用途食用,但食用这些菇通常会造成不适,所以一般不被视为可食用蕈。食用蕈包括许多野外采集和人工种植的物种,可能生长在木头上、寄生在其他生物上、地表、或地底下。容易种植或采集的物种常能在市场上购得,而较不易取得的,如松露松茸等,则只能小规模采收,且价格通常较高。[1][2][3]

真菌在演化上其实与动物亲缘关系较相近,而与植物较为疏远,故相对做为食材,有丰富而独特的味道,而人类食用蕈菇的历史悠久。距今13000年的智利考古遗址即有发现食用蕈,更确切的证据在公元前数百年的中国。中国人同时用蕈类当作食物(香菇、木耳)和药物(冬虫夏草、灵芝)。古罗马古希腊人也会食用蕈类,特别是上层阶级;罗马皇帝的食物会有专人先试吃确保安全。因为蕈菇很容易干燥保存,因此在许多地方是冬季的重要存粮。[3][5]

相较于欧陆,英国文化特别排斥采野菇作为食物,并将此文化传到北美、纽澳等殖民地。[6]

许多传统文化都会用迷幻蘑菇作为宗教和医疗用途。[7][8]

人类食用的蕈类中,只有一小部分有商业种植及销售。商业化的种植对生态保育相当重要;有商业销售但仍不易人工种植的物种很容易面临灭绝的危机,如鸡油菇在欧洲的情况。商业种植的食用蕈中较常见的有香菇草菇洋菇金针菇杏鲍菇木耳等等。

营养价值[编辑]

虽然说菇类不需要阳光就可以生长,但经照射阳光的洋菇会大幅提高其维生素D含量。这是因为洋菇在照射紫外线时,能将麦角固醇转换为维生素D2,这和人类照射紫外光时合成维生素D3的过程类似[9][10][11]。在采收前照一小时的紫外光能让洋菇的维生素D含量达到一日建议摄取量的2倍,采收后照5分钟则能达到4倍。[9][12]

干燥的食用蕈

有些种类的蕈菇生食有毒或无法消化,但可以在煮熟后食用。一般野外采集的菇都建议煮熟后再食用,除了去除蕈菇本身可能带有的毒素之外,也避免细菌或寄生虫污染。

很多食用蕈都可以干燥保存,在使用时先泡水或直接水煮即可复原。用来泡蕈菇的水也可以用来入菜,但底下如果有土沙的部分要倒掉。

蕈菇的料理方式可以煮、炒、烤、炸、烫、腌渍等等,也以做成汤、酱汁、沙拉。[13]

药用[编辑]

在民俗疗法中,有些蕈类被认为具有药用效果,最主要的例子是在亚洲地区,特别是中医体系[14]。许多蕈类仍未接受现代西方医学的验证,因此在其他地区(如美国)一般不能作为药物出售[15]

有些中医常用的药用蕈类正逐步接受现代医学的研究,大多仍在细胞株、动物实验和初阶人体实验的阶段[16]。目前的研究已显示有些蕈类粹取物具有抗菌、消炎、抗病毒、止痛、抗癌、心血管及降血糖等效果。其中一些如多糖体K英语Polysaccharide-K(polysaccharide K)[17]多糖肽英语polysaccharide peptide(polysaccharide peptide)[18]香菇多糖[19]等已经在一些亚洲国家投入医疗使用[20][16]

鉴别[编辑]

如果误食可能造成严重的症状,包括死亡[21],因此,在食用任何蕈类之前,必须先辨认之,只有正确地辨认出蕈菇的种类后才能确保安全。有些分类的真菌,例如鹅膏菌属,同时包含有剧毒的(如毒鹅膏)和可食用的(如橙盖鹅膏菌)物种,而且外观非常类似,因此务需谨慎。有些一般情况下可食用的蕈类仍可能造成危险,原因包括在少数人身上会造成过敏、储存不当会造成食物中毒、生长在污染严重的地方而累积了毒素或是搭配特定食物一起吃而导致中毒。[22]
